INGREDIENTS:
- Muffin Mix for 12/16 muffins
- 3 medium eggs (around 55 g x 3)
- 75 g butter
- 100 ml sunflower oil
For best results, we advise making sure that all the ingredients are at room temperature.
PREPARATION:
Break the eggs into a bowl, and beat them together with the softened butter, mixing well for around 1 minute. Slowly pour in the Muffin Mix, add the sunflower oil, and mix for 5 minutes until you have a soft mixture with no lumps. Grease and flour a muffin tin (or otherwise use paper cupcake cases), and pour the mixture into the tin with a spoon, filling 3/4 of each mould. Bake for 15-25 minutes at 180°C. For that extra something: add chocolate chips, coconut flakes, sultanas or candied peel to the mix. As much as you wish!
